More about the podcast

Meet your hosts

Stephen Woolf

Creator & host

Stephen started the show in 2022 after years of thinking about it. Episodes have taken listeners through the original imported genetics and history of Wagyu in the United States, Akaushi cattle, embryos, vaccines, breeding selection and the business of raising Wagyu.

Layne Felsted

Master butcher & meat scientist

Layne brings the other side of the process to the table: processing, butchering Wagyu, and how breeding and husbandry decisions show up at the butcher shop. He and Stephen have also tackled feeding, the cattle market and listener questions.
